I know that if I'd made this into lots of diddy rolls instead of two big ones, they'd basically be veggie sausage rolls, but I decided to go for a slightly fancier name because this recipe
deserves it. As you can see, I had mine with some steamed broccoli and crushed new potatoes, but you could go all out and have it with your Thanksgiving or Christmas dinner; it would be a great veggie alternative to turkey, and it goes perfectly with a drizzle of gravy.
This was one of those recipes that I didn't have particularly high hopes for - I was basically just adding anything to the bowl that I thought could work, without any real image of what I wanted to make. I had some puff pastry to use up so just thought I'd fill it with some random bits and pieces. Usually my experiments don't work out so well... but this one was soo much better than I expected. The chopped walnuts retained a bit of their crunch, which somehow made it feel more festive - again, perfect for Christmas dinner!
Notice how as soon as November begins, I start talking about Christmas. My boyfriend would tell me off (his family don't even put their tree up until Christmas Eve), but for me the majority of the excitement comes from the anticipation, so I'm probably not going to shut up about Christmas from now until then. Sorry about that.
(I'm not as bad as some, though - last year we saw a decorated Christmas tree set up in a pub in
early September. Mental)
This recipe makes quite a lot -
two of the larger rolls you can see in the background of the photos (the second one's not pictured). If you want, you could make it into one mega roll, or lots of mini sausage rolls for lunchboxes and whatnot. It'd be seriously tasty either way.

ReplyDeletethis is a great idea!!!! I have enveloped many things in puff pastry, but I am liking this version. I will try to add the broccoli inside teh puff pastry instead of outside as a side. What do you think????
ReplyDeleteYou could definitely try it, it'd be a lot more bulky though. You'd probably need to blanche the broccoli first too :)
