If only I were better at photography, I could do recipes like this justice. Gooey, melty brie paired with sweet, but slightly tart, plums... and the cinnamon, oh my god the cinnamon. New favourite spice fo' sho'. I have a feeling I will be putting it on everything from now on.
It's times like these that I wish I lived in America, then a dish like this would be considered breakfast. I never quite got that myself. I'm a Bran Flakes girl myself.

Plum and brie stuffed cinnamon French toast
Serves 1
2 slices white bread
40g brie, sliced
1 fresh plum, sliced
1 egg
50ml milk
1tsp cinnamon
1tbsp butter
Create a sandwich with the bread, brie and sliced plum.
In a dish or deep plate, lightly beat the egg with the milk and cinnamon. Carefully drench the sandwich in the egg mixture, leaving it for a minute or two each side to soak it up.
Melt the butter in a saucepan, and turn the heat down to low. Add the sandwich, and cover the pan (use another frying pan if you don't have a lid) - this helps the heat to stay in, softening the plum and melting the cheese while the outside of the sandwich crisps up. Leave it for 4-5 minutes, or until the underside is nicely browned, and then flip the sandwich over, covering the pan again. Leave for a further 5 minutes, and then serve warm.

Oh my, this looks so blinking good!
